Ingredients:
1 Carton Chocolate Chip Chewy Granola Bars, using 2-3 bars for 1/4 cup chopped granola bars
2 Cups Pancake Mix
2 Eggs
1 Cup Milk
1 Tablespoons Vegetable Oil
1/4 Cup Mini Semi-Sweet Chocolate Chips
Supplies:
Frying Pan or Griddle
Food Processor, optional
Directions:
- Unwrap 2-3 Chocolate Chip Chewy Granola Bars and in a food processor (or with your hands), break them into tiny pieces so you have 1/4 cup.
- Next, mix together the pancake mix, eggs, milk and vegetable oil in a medium bowl.
- Fold in the chopped granola bars and chocolate chips.
- On your prepared griddle (or pan), ladle 1/4 cup of the batter on medium-low and cook until edges are dry. Flip and cook until golden brown.
- Top with whipped cream and more granola bar crumbles. Maybe even some maple syrup and butter!
