Makes 8 Servings
Ingredients:
- 1 Carton Lemon Meringue Chewy Granola Bars
- 6 Egg Yolks
- 1/2 Cup Fresh Lemon Juice
- 1/2 Cup Granulated Sugar
- 2 1/2 Tablespoons Lemon Zest
- 1/2 Cup Salted Butter, Cold
- 1 Package Mini Meringue Cookies
- 1 Bunch Fresh Thyme
Supplies:
- Sieve
- Glass Jar
Directions:
- In a small bowl, mash together the sugar and zest to release the oils.
- In a medium bowl, whisk the egg yolks. Add the lemon juice and sugar mixture. Pour into a pan and cook on on medium heat until it thickens and coats the back of a wooden spoon.
- Remove from heat and stir in butter until melted and smooth.
- Train the mixture with a sieve and place in a glass jar.
- Cool completely. Cover tightly and refrigerate for up to 4 hours or up to to 1 week. The curd thickens the more it cools.
- When ready to assemble, unwrap the granola bars and pipe or spread the lemon curd on top of each.
- Next, place the mini meringue cookies on top of the lemon curd.
- Garnish with fresh thyme and enjoy!
