Strawberry Granola Muffins

Makes up to 12 Muffins


Ingredients:

  • 1 Carton Strawberry Soft Baked Bars, crumble 2-3 bars
  • 3 Cups Flour
  • 1 Tablespoon Baking Powder
  • 2 Eggs
  • 1 Cup Granulated Sugar
  • 1/4 Cup Brown Sugar
  • 1 1/2 Teaspoons Vanilla Extract
  • 1/4 Cup Butter, Melted
  • 1 Cup Evaporated Milk
  • 1 Cup Chopped Fresh Strawberries
  • 1/4 Cup Vegetable Oil
  • Finely Crumbled Freeze-Dried Strawberries, optional
  • White Icing, optional


White Icing Recipe:

  • 1-2 Tablespoons Milk, dairy or non-dairy
  • 1 Cup Powdered Sugar
  • Splash of Vanilla Extract or Lemon Extract


Supplies:

  • Muffin Pan, greased or lined
  • Large Bowl or Stand Mixer

Directions:

  1. Pre-heat oven to 450 degrees and grease muffin pans with cooking spray. Be sure to spray the top of the pans so muffin tops won’t stick.
  2. In a large bowl, combine flour and baking powder.
  3. In another mixing bowl or in a stand mixer, beat together the eggs, granulated sugar, brown sugar, vanilla extract, oil and butter. Add evaporated milk and mix until fully combined.
  4. Stir in the flour mixture, careful to not over mix.
  5. Fold in the chopped strawberries until combined.
  6. Spoon batter into muffin cups and fill all the way to the top.
  7. Using 2-3 crumbled Strawberry Soft Baked Bars, sprinkle the top of the muffin batter.
  8. Add muffins to oven and immediately reduce the heat to 350-degrees. (Pre-heating to 450-degrees and reducing to 350-degrees will create the perfect muffin dome.)
  9. Bake for 20-30 minutes or until toothpick comes out clean.
  10. Drizzle with icing and sprinkle with crushed freeze-dried strawberries. Cut a fresh strawberry into a heart shape and place on top if desired.


Recipe Tip:

To make your own white icing, combine in a small bowl 1 cup of powdered sugar, 1 tablespoon of milk (your choice) and a splash of vanilla extract or lemon extract. Mix together and add a little more milk until the consistency is slightly thick. Drizzle on top of muffins and let the glaze set for about 10 minutes.
